Grilled Stuffed Italian Chicken

4-4oz. chicken breasts

4-roasted red peppers strips

approximately 20 baby spinach leaves

4-string cheese

Light Italian dressing for basting


Preheat indoor or outdoor grill to med-high heat.  Butterfly the chicken breasts.  Place about 5 baby spinach leaves in middle, or on top or on one side.  Put roasted red pepper, and string cheese on top of spinach, to melt.  Roll lightly, and put 1-2 toothpicks on the ends or on top, to hold the ingredients together well.  Grill about 5 minutes, turn and grill 5 more minutes.  Check for doneness and turn again, if needed, until cooked through, or maybe (10 to 15 minutes, depending on the heat of your grill.  Serves as is or slice chicken when fully cooked.  Sprinkle, (Lightly Italian dressing for basting on top, with a grill brush, for taste.)
